A workshop hosted by The University of Nottingham’s Food Innovation Centre
In the morning session, participants will gain an overview of key legislation and law on nutritional labelling and claims, before learning how to determine values for nutritional labelling.
The afternoon session will explore the general nutritional topics of limitations, deficiencies, fortification, and dangers. The focus will then turn to Gluten Free, examining what is actually true, the opportunities scientists perceive, and what claims can be made and how.
